Dal Bati Churma : This famous Rajasthani dish needs no introduction. Dal bati churma is synonymous to Rajasthan; known for its crunchy batis, dipped in ghee along with spicy dal and sweet churma.

Dal is pulses or lentils which is cooked by adding masala after being soaked in water for a few hours.
Baati is a hard bread made up of wheat flour commonly known as aata. Wheat flour is kneaded with little bit of salt, yogurt and water. Then make small size round balls of this dough which is cooked in a well-heated traditional oven until it became golden brown.
Mirchi Vada (Stuffed Chilli)

Another snack delight from Rajasthan, Mirchi vada are perfect answers to complement evening tea or morning breakfast. The hot and spicy vada are scrumptiously delicious.
The popular street food ‘Mirchi Vada’ of Jodhpur, Rajasthan is prepared using ‘Bhavnagri chilli’ stuffed with traditional ingredients a mixture of potato, dipped in a mix of Gram flour(Besan flour) and then fried in hot cooking oil. Served with Chutney. The snack is considered as a lifeline for the daily wage worker as it is easily available.
Shri Mishrilal Hotel
Just inside the southern gate of Sardar Market, this place is nothing fancy, but whips up the most superb creamy makhania lassis (filling, saffron-flavoured lassis). These are the best in town, probably in all of Rajasthan, possibly in all of India.

RAAS Jodhpur is based around an original eighteenth century Haveli. Echoes of the Rajput architecture can be found throughout the building, in everything from its intricately carved stone panels to its antique shrines to the arches surviving from the stables.
The whole complex is overlooked by Mehrangarh, an awe-inspiring 15th century fort looming 400 feet above the Jodhpur skyline. When lit up in the evenings, the views are simply breathtaking and, like virtually every home here, almost every room in the hotel enjoys the most spectacular view of the fort, rated in 2008 by Time Magazine as “Asia’s Best Fortress”.

The rooftop terrace of Stepwell House hosts this classy restaurant featuring uniformed staff, Indian wine and Spanish beer. The excellent North Indian veg and nonveg dishes include tandoori favourites and Rajasthani specialities, such as govind gatta (cottage cheese and gram-flour dumplings in a yoghurt curry). Do try the aloo Simla mirch (green bell peppers and potatoes in a spicy gravy).
